Effect of slaughter age and post-mortem days on meat quality of longissimus and semimembranosus muscles of Boer goats

This study investigated the effects of age animal and days post-mortem (PM) on meat quality Boer goats. Twenty-four (24) wether goats two groups (2YO group: 2 years old 9MO: 6–9 months, with 12 animals/group) were slaughtered in a commercial processing plant. The [email protected] was estimated to be above 6 both higher (P < 0.01) values 2YO PM storage for 14 reduced shear force 0.01). goat muscles (longissimus semimembranosus) exhibited Thiobarbituric acid reactive substance (TBARS), indicating increased lipid oxidation. Glycogen lactate content (20 min post-slaughter) longissimus 9MO lower compared 2YO, total muscle glycogen concentration below threshold levels. Hence, as hypothesized, proved play crucial roles quality.
